Better with Bacon – Cheese & Bacon Skewers

Sometimes we need to go half way across the globe to find simple bacon recipes…this one is from Executive Chef Pham Quoc Vu of Barbecue Garden Restaurant in HCM City.  That’s right, Ho Chi Minh City!

Cheese & Bacon Skewers

This recipe is ideal for those who prefer grilled dishes without much fat. Chef Vu’s creation is a combination of both Western and Asian styles which mix bacon and cheese, accompanied by lemon juice mixed with salt and pepper. The dish is one of the most requested at his restaurant.

Ingredients: for three skewers (you’ll have to do the conversions yourself ;-) )

  • Bacon: 270 gr
  • Cheddar cheese: 27 gr
  • Onion: 30gr
  • Capsicum: 30gr
  • Salt and black pepper: 10 gr
  • Lemon: 2 slices
  • Cooking oil: 5ml
  • Greens to your liking

Method:

  • Cut cheese into nine pieces Cut onion and capsicum into thin fibers
    Divide bacon into nine pieces and put on chopping board. Place a piece of cheese and a piece of onion on the bacon, then roll the bacon. Continue the work until you finish the last roll.
  • Put all these nine rolls of bacon on three skewers, with three bacon rolls on each skewer.
  • Cook the beef over a charcoal fire or grill until fragrant. Turn frequently to prevent burning, and constantly brush with cooking oil to give the beef a glossy look.

Garnish:

  • Put a piece of green banana leaf on a round plate and then put these skewers over the leaf. Garnish with greens, tomato and coriander leaves.
  • The dish is served with black pepper, salt or chili sauce with lemon juice, or mayonnaise and greens mixed with sweet-sour vinegar and oil.

The skewers are served by Chef Vu during lunch and dinner at the Barbecue Garden Restaurant, 135 A Nam Ky Khoi Nghia Street, District 1, HCM City.
