Here we are after Labor Day and I’m just now getting to making my own bacon for the BLT from Scratch Challenge.  According to Ruhlman’s contest rules, I should have had this thing completed by now, but given my 1) lack of urgency, B) uninterest in actually cooking and third, overall busy schedule this summer, I just never found the time. Well no more excuses now!  As our garden is standing on it’s last legs it was time to get movin’.  

I was able to get a slab of pork belly from Hiller’s (again let me share, the best customer service experience I have ever had), picked up some “pink salt” from the butcher supply store in Eastern Market and we are makin’ some bacon baby!!
