Better with Bacon – Stompy Pie
Oh my gawd…..
I have never heard or seen such a thing and I truly believe I am a better person for now knowing this exists.
This recipe was submitted to “Red Eye“, the Chicago Alt Paper, for a contest called the Virtual Kitchen Stadium where readers submit recipes for “Top Chef” winner, Stephanie Izard to judge. After three weeks, a finalist is selected and will cook their dish with Stephanie at one of her Wandering Goat dinners.

Stompy PieÂ
Ingredients:
- 6 apples (your choice) peeled and diced
- 1/2 cup of sugar
- 1/2 cup of brown sugar
- 3 teaspoons of flour
- 1 can of cherry pie filling
- salt
- stick of butter
- pre-made pie crust
- teaspoon of red curry powder
- 7 slices of bacon
- Heavy Cream vanilla ice cream
- Cinnamon basil for garnish
Directions:
- Slice the apples to your desire. Fry bacon in pan and use grease to saute the apples. Soaking the apples with bacon grease. In separate pan add butter and melt with sugars, flour and salt. Once mixture is melted add cherry pie filling and apples to mixture on stove at low heat. Stir in red curry powder evenly and turn with spoon for a couple of minutes.Â
- Place pie crust in deep dish pie pan and back for about 8 min. Once lightly brown remove and place pie filling in pie pan. Then place pie crust on top of pan and bake for 35-45 min depending on oven. Let stand for approx. hour and serve.Â
- Serve pie on plate with ice cream. you may add left over Stompy mixture to top of ice cream. Garnish with Cinnamon basil.Â
