This is kind of a no-brainer, bacon, lettuce and tomato being such a beloved sandwich combo, especially when there’s a good smear of mayo. This guacamole is in the same vein, except that the tangy, creamy mayo is replaced by avocado and lime. Come to think of it, the avocado, along with a little cilantro, brings the lettuce-green to the picture as well. It’s a perfect Mexican-American fusion of smoky, bright, creamy, fresh and satisfying.

Well hello there everyone – back from my conference in Nashville and it’s time to get back to bringin’ bacon goodness!

Started this morning with breakfast at the Nashville International Airport…

Weird glossy look aside, it was pretty good.  I dare some of the best pre-cooked, reheated bacon I have ever had (not like that is really saying something, but for those of you who know, you know…)

This is Darth Bacon! created by artist Dan Goodsell, he of Mr. Toast fame.

Brilliant isn’t it?  It’s part of The Vader Project – a touring exhibit that featured replica Darth Vader masks designed and reinterpreted by underground artists.

Well the exhibit is off the road and now all the helmet are being auctioned off this week (July 10th) in Philadelphia.

As a kid, I hated broccoli!  Still not a huge fan of it even through I know how good it is for me.  I will only eat it 1) raw or 2) VERY lightly sauteed.

You all know that I LOVE BACON…that much is true.

So take some of that tasty, tasty meat and mix with raw broccoli and you’ve got something that even a non-broc lover like me would down by the spoonful.
