Provolone is a terrible cheese, especially for melting into mac’n’cheese (or in philly cheesesteaks, you hosers!!). And Asiago is better for garnishing on top then melting as a cheese sauce. I would definitely use a 2 cheese blend for the mac: smoked Gruyere and Gouda would be a nice selection, even substitute cheddar if you prefer. And some shaved Asiago or Parmesan Reggiano on top.

But we can all agree that BACON makes the mac!
