Makin’ Bacon – For Realz!

This post popped up in my inbox last night and I got to tell you…I admire his work!

Michael Pusateri is this man’s name and making his own bacon seems to be his new game.

He went from a slab of pork belly like this…

To wonderful smoked bacon like this…

FANTASTIC!  I say to you sir, job well done!  Even went as far as creating a smoker out of a trash can!

I’m tempted to try myself…run down to Eastern Market and grab me some pig…where can I find a smoker???  Oh and I need a slicer…

See the rest of his post HERE.

Know we know how to make delicious bacon ourselves…and as always “Knowing is half the battle!”

I MADE BACON! BWAHAHAHAHA…

Throw whatever mythology or misconceptions you may have had about curing meat or making your own bacon out the window ’cause brothers and sisters I have done it!  I CREATED BACON!!!

Now in all honesty it’s not that hard.  But I got to tell you, I was really apprehensive about this.  I am not a cook at all.  Can I cook some stuff? Yes.  Will I be on the next episode of “Top Chef”? No.

So anywho, last week I pulled the pork belly out of the fridge after curing for the last 9 days. [Read more →]

BLTfSC – Time to Get Me Some Pig!

Here we are after Labor Day and I’m just now getting to making my own bacon for the BLT from Scratch Challenge.  According to Ruhlman’s contest rules, I should have had this thing completed by now, but given my 1) lack of urgency, B) uninterest in actually cooking and third, overall busy schedule this summer, I just never found the time. Well no more excuses now!  As our garden is standing on it’s last legs it was time to get movin’.

I was able to get a slab of pork belly from Hiller’s (again let me share, the best customer service experience I have ever had), picked up some “pink salt” from the butcher supply store in Eastern Market and we are makin’ some bacon baby!!
