Bacon Beer Cornbread
Ingredients:
- 6 slices thick-cut bacon, chopped
- 1 1/2 cups finely ground cornmeal
- 1 1/2 cups whole wheat pastry flour
- 2 tablespoons sugar
- 1 1/2 tablespoons baking powder
- 3/4 teaspoon salt
- 3 large eggs
- 1 cup of your favorite beer
- 1/2 cup milk
- 1/3 cup sour cream
- 1/2 cup unsalted butter, melted

Better with Bacon – Guarnaschelli’s Roast Chicken with Bacon…
I have come to really enjoy watching Chef Alex Guarnaschelli cook! I gained a ton of respect for her while she was on Next Iron Chef, not just for her cooking but for her competitive spirit!
Chef was on CBS This Morning: Saturday this last week and broke out this wonderful piece of bacon goodness…

Hi There…Nice to See you Again…and I Brought a Recipe…
Allow me to re-introduce myself. My name is Michael Baird and I’m the author / founder of this magnificent blog about all things bacon and some occasional nerdy stuff.
I just thought I’d throw that out there seeing as I haven’t been around much lately.
So how you doin’?
Me – my head is molting from gettin’ my melon burnt in Florida, I’ve got some type of bronchial infection, and I’m once again in a hotel this week after spending the weekend moving my entire house into the basemen tso some guy can come in and redo our floors. Not that I’m complaining mind you, I got it pretty good all things considered, I just want to be honest.
So where does all this leave us this week on The Daily Bacon? Well, giveaways need to wait one more week (as they are all packed in a box in the basement). If your not a fan on Facespace, get over there and like us ASAP so you don’t get left out. Other than that, we’ll be getting back to providing all of you, my 10′s of readers, with the bacon goodness you have come to expect from this little corner of the interwebs.
Let’s begin with this tasty little recipe I found today, courtesy of the blog Pink Parsley (but inspired by Rick Bayless):
Bacon-Chipolte Guacamole
Ingredients:
- 4 strips of bacon, preferably thick-cut, applewood-smoked bacon
- 3 ripe avocados (about 1 1/4 lbs)
- 1/3 cup finely chopped white onion
- 3 canned chipotles en adobo – seeds removed optional – finely minced
- 1 tomato, cored, seeded, and finely chopped
- 1/4 cup chopped cilantro
- 1 clove garlic, minced
- juice of 1 lime
- kosher salt to taste

Better with Bacon – Sweet Potato and Bacon Bites…

Seriously, who doesn’t want one (or two, or three) of these right now?
Sweet Potato and Bacon Bites
Ingredients
- a large sweet potato
- bunch of green onions (about 3 onions per sweet potato)
- bacon of choice (or bacon bits – recommended 3 strips of bacon for one potato.)
- sour cream
- shredded cheese of your choice (recommended cheddar!)
- salt, pepper and chili powder
- olive or canola oil

Better with Bacon – Maple Bacon S’mores…
That’s right, I said MAPLE…..BACON…..S’MORES!
Homemade maple bacon marshmallows!! People, what more needs to be said?!? I think I found my next “Test Kitchen” recipe!
Maple Bacon S’mores
- 1/4 cup packed light brown sugar
- 1/4 teaspoon cinnamon, divided (1/8 for bacon, 1/8 for marshmallows)
- 6 slices hickory smoked bacon
- Unflavored cooking spray
- 4 1/2 teaspoons unflavored powdered gelatin
- 1/2 cup cold water
- 2/3 cup white sugar
- 1/2 cup maple syrup (use the high quality stuff here)
- 1/4 cup light corn syrup
- 1/4 cup water (filtered or bottled preferably)
- 1/3 teaspoon fine grain sea salt
- 1/2 cup confectioners’ sugar
- 1/3 cup corn starch
- Graham crackers, for serving
- Bittersweet chocolate, for serving

Bacon and Corn Griddle Cakes
Ingredients:
- 8 slices bacon, cut into 1/2-inch pieces
- 1/3 cup finely chopped sweet onion
- 1 cup all-purpose flour
- 2 tablespoons chopped fresh chives
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/8 teaspoon cayenne pepper
- 2/3 cup milk
- 1 large egg, beaten
- 1 tablespoon canola or vegetable oil
- 1 cup frozen, canned or fresh corn
- 1/2 cup shredded Monterey Jack cheese
- warm maple syrup, for serving

Better with Bacon – Candied Bacon and Genoa Panini…
This came through the Google machine today and just it’s description made my mouth water and I knew, I KNEW, I was going to be sharing it with all of you tonight!
Candied Bacon and Genoa Panini
Ingredients:
- ½ sweet onion
- ½ each red, green and yellow peppers
- 8 strips of bacon
- 4 slices Genoa salami
- 4 slices tomato
- Boston butter lettuce
- 4 slices Fontina cheese
- 1 tbsp olive oil
- ½ c brown sugar
- 1 tsp Balsamic vinegar
- 2 tbsp white wine
- dash of salt and pepper
- 1 tsp per panini balsamic glaze
- 1 tsp per panini dried basil
- 2 tbsp chopped roasted garlic
- 2 tbsp butter
- 1 tbsp white sugar

Better with Bacon – Coffee Glazed Bacon…
I LOVE bacon. I also love coffee. So how could this go wrong?
Coffee Glazed Bacon
Ingredients:
- 6 to 8 slices of Smoked Bacon
- 1/4 cup Brown Sugar
- 1/4 cup Hot Espresso
- 1/4 tsp Paprika
- 1/4 tsp Black Pepper

Better with Bacon – Bacon Bourbon Brownies…
Yup, that’s what I said, bacon + bourbon + brownies. That equals deliciousness!
See that “crumble” on the top? That’s diced bacon my friends.
I got wind of these from over at The Food in my Beard (now that sounds like a food blog I could get behind). He’s got great step-by-step photo instructions but no recipe. For that, you’ll have to use what he did over at Food and Wine.

The Future of Bacon Ice Cream…
What goes better with yesterday’s cake with bacon flavored frosting than some homemade bacon flavored ice cream of the future?
This AWESOME mom decided to play with molecular gastronomy for Instructable’s Mad Science Fair and created her own version of “Dippin’ Dots“.
Alas no real bacon was used in the recipe, just Torani’s bacon flavored syrup, but still big props to her!
